Step-By-Step Photo Instructions To Make Dry Anchovy Curry
#1 Firstly, soak one cup of dried anchovies in warm water for 10-15 mins to soften. After 15 mins, drain the water from the anchovies.
#2 Heat oil to the pain. Add half a tablespoon of oil. Once hot, add anchovy and stir fry on medium-high heat for 4-5mins. Don’t let it burn. Once fried, remove it from the pan and set it aside.
#3 Add half a tablespoon of oil, then add cumin seeds. Let it cook for a min until the color changes to brown. Add ginger & garlic and green chili to the pan. Stir fry for a few mins.
#4 After that, add chopped onion. Cook it until the onion color changes to brown and softens.
#5 Once onion softens, add chopped tomatoes and cook it for a few mins on medium-high heat. Once the tomato is half cooked, add all spices; turmeric, masala powder, red Kashmiri powder, and salt.
#6 Mix everything well. Cook it for 2-3 minutes. Add half a cup of water. Let it simmer. Once the paste becomes thick or water-dried, add fried anchovy and combine everything well.
#7 Add half a cup of water and let it simmer for 4-5 mins.
#8 Finally, add cilantro. Mix everything well. And anchovy curry is ready to serve.
What To Serve With Anchovy Curry?
There is no better way to eat curry than with rice or roti. Serve it with white rice, chapati, naan, or roti. I like it best with rice. Also, you can eat it with bread if you don’t have rice or roti.
